Compass is known for its Nitro Cold Brew. As delicious as the Nitro Cold Brew might be, there are always customers who prefer regularly brewed iced coffee. To accommodate these requests, Compass uses a modified pour over method to create a bright, nuanced iced coffee. Using ice and acknowledging the added water as the ice melts during the brewing process in the formulation of the brewing ratio ensures that the coffee isn’t watered down.
Iced Coffee Brew Guide
This method uses a standard 8-cup Chemex to brew amazing iced coffee at home!
Step 1
Preheat your water to 205° F.
Step 2
Carefully measure 40g of your favorite coffee.
Step 3
Add 350g of ice into your Chemex.
Step 4
Place the filter into the Chemex. Make sure the side with three folds faces the spout.
Step 5
Rinse the filter with cold water. We're using cold water in this step to minimize premature ice melting, which will affect the ratio of coffee to water in the following steps.
Step 6
Discard the rinse water by pouring it out of the back of the Chemex - that is, the the side that is opposite the spout.
Step 7
Grind your coffee on a medium setting.
Step 8
Lightly tap the side of the Chemx to even out the bean bed.
Step 9
Place the Chemex on your scale and tare it to zero.
Step 10
Start your timer and pour the first 70g of coffee making small circular motions with your kettle. Let bloom for 15 seconds.
Step 11
Over the next 3 minutes, make four more 70g pours. This will be one every thirty seconds until you reach a total of 350g.
Step 12
Once you reach 350g, let the coffee fully drain. If the grind size it correct, it should be fully finished at the 3:30 second mark.
Step 13
Discard the filter full of grounds when your timer goes off. Pour the finished coffee into a large glass filled with ice.
